Dr. B’s Asian Fusion Coconut Ginger Stir-Fry

Ingredients

  • 2 Tbsp of sesame oil
  • 2 Tbsp of sesame seeds
  • 1 large clove of garlic, chopped
  • ½ large yellow or red onion, chopped
  • 2 Tbsp of grated ginger
  • ¼ cup of unsweetened coconut flakes
  • ½ head of broccoli, broken into small florets
  • ½ head of cauliflower, sliced into bite-size pieces
  • 1 yellow squash, sliced into bite-size slivers
  • 1 large handful of snow pea pods
  • 1 large handful of small portabella mushrooms, sliced into bite-size pieces

Instructions

  • Heat pan (I have a small wok skillet) with the first six ingredients on high, stirring as it is heating.
  • When the garlic and onion begin to look translucent, start adding the veggies. Using a spatula, constantly turn the veggies from the bottom of the pan to the top.
  • I like my veggies hot but crunchy, so when the broccoli starts to get a brighter green the rest of the veggies should be done.

Sesame Garlic Quinoa

Ingredients

  • 1 cup Quinoa
  • 2 cups water
  • 1 Tbsp sesame oil
  • ½ glove of garlic finely chopped
  • 1 Tbsp Red pepper flakes, optional or to taste

Instructions

  • Put all ingredients into the pot. I use a rice steamer.
  • Bring to boil, stir.
  • Reduce heat to simmer, and cook till the water is absorbed.
  • Serve it so it looks pretty on the plate!
