Dr. B’s Famous Spinach and Chicken Quiche


  • 1 tsp grass-fed butter, for greasing
  • 4 oz. cooked organic chicken breast
  • 8 free-range eggs
  • ½ cup organic heavy whipping cream
  • ½ tbsp minced garlic
  • ½ cup chopped onion
  • ½ tsp salt and a dash of nutmeg (optional)
  • 4 oz. (1 ¼ cups) fresh spinach, chopped
  • 2 oz. (¼ cup) shredded parmesan cheese


  • Preheat the oven to 350 F°. Grease a 9″ (23 cm) pie plate with butter.
  • Place the chopped chicken in a cold skillet with a little butter. Cook over medium heat until no pink shows, turning occasionally to brown evenly. Drain the chicken and set it aside.
  • In a medium-sized bowl, whisk together the eggs, cream, garlic and nutmeg until well combined.
  • Place the chicken, spinach and chopped onion into the pie plate. Pour the egg mixture over the chicken, spinach and chopped onion and sprinkle the cheese on top.
  • Bake on the middle oven rack for 20-30 minutes, or until golden brown. Cool for 5 minutes before serving.
